A Lunigiana \u00e9 a \u00e1rea onde as regi\u00f5es da Toscana, Lig\u00faria e Em\u00edlia-Romagna da It\u00e1lia se encontram; pense simplesmente no norte da Toscana e procure pelas cidades de Aulla ou Pontremoli, essa \u00e9 a \u00e1rea sobre a qual estou falando. O Testaroli n\u00e3o \u00e9 um prato muito conhecido e \u00e9 algo que voc\u00ea s\u00f3 descobre se for um verdadeiro viajante que visitou essa regi\u00e3o escondida. Voc\u00ea ficar\u00e1 surpreso com a facilidade de fazer testaroli e o qu\u00e3o satisfat\u00f3rio \u00e9 este delicioso prato. Os testaroli geralmente s\u00e3o cozidos primeiro em uma frigideira plana especial chamada \u201ctesto\u201d (na Lunigiana, o \u201ctesto\u201d tradicional \u00e9 feito de terracota ou ferro fundido) e depois cozidos em \u00e1gua salgada. No meu caso, usarei a mesma frigideira plana que usei para preparar o\u00a0<a href=\"http:\/\/italyum.com\/pt\/italian-recipes\/pizza-recipes\/piadina-romagnola.html\/\">Piadina Romagnola<\/a>\u00a0receita que, de um ponto de vista pr\u00e1tico, far\u00e1 o mesmo trabalho que usar uma frigideira original de Lunigiana \u201ctesto\u201d. Os testaroli devem ser servidos com\u00a0<a href=\"http:\/\/italyum.com\/pt\/italian-recipes\/vegetarian-recipes\/pesto-sauce.html\/\">molho pesto<\/a>.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Nota: com estes ingredientes, voc\u00ea deve conseguir preparar dois discos grandes de testaroli, com 27-28 cm de di\u00e2metro, o que \u00e9 suficiente para servir quatro
